Cantine Scarfo' is a family winery that produces wines with simplicity and sincerity, letting the grapes and territory define the wine so as to offer a unique and original experience. Each wine is produced with the utmost care and with the least amount of intervention in the cantina.

The Varietals

Following the ancient tradition of the island's vintners, Ansonaco wine is predominantly produced with mostly Ansonica grapes along with a handful of other white varietals such procanico, malvasia, empolo and biancone. The old vineyards also contain a very small number of red varietals such as granace, corbolana and aleatico. If added during maceration, they will contribute to the very unique aromas present in the ansonaco wine.

The Harvest

The harvest tends to takes place in the second half of September, when the grapes are well-ripened and rich in sugar and aromas. The grapes are usually harvested in two days, with the help of other local winemakers and friends. Bunches are gently pressed within few hours from the time of harvest and the skins are left together with the must during the first four days of fermentation, following the local tradition.

Ambrato di Radice

Ambrato di Radice is made on the Island of Giglio in steeply terraced vineyards composed of sandy-quartz soil that enhances the savory and fruity expressions of the Ansonica varietal. The grapes are cultivated in the vineyards of Cantine Scarfo’ in the localities of Radice and Corvo where the strong winds leave hints of sea salt on the grapes.


Winemaking on the island is considered difficult due to the low yields, intensive manual labor, and hand-harvesting and on the extreme terraces of the vineyards. However, this challenge results in providing the winery a grape that is rich in character. In the cantina, the wine is made with only a minimal amount of interference so as to allow the wine to fully express itself. The wine ferments exclusively with the use of the natural, wild yeast found on the grape clusters at the time of harvest. Cantine Scarfo’ follows the traditional winemaking methods of the Island of Giglio, producing a rich and complex wine offering notes of flowers, fruits and Mediterranean plants. Their cantina is nestled in the heart of the medieval neighborhood at the Castle.

Cantine Scarfo' cultivates its grapes on the steep terraces of Giglio Island, characterized by soils rich in minerals and by a warm climate with excellent thermal variations in summer. This wine is obtained from grapes harvested mainly in Scopeto and Fontuccia. In the cantina, grapes are softly pressed with a small wooden press. The resulting wine is unique for its expressiveness, freshness and sapidity. The vivacious amber color suggests sweet and delicate aromas. Its balanced acidity and pronounced minerality enhance the notes of citrus flowers, Mediterranean flora, and tropical fruits.
